SW's Shepherd's Pie is delicious.

Meat Base:
500g minced beef. You can replace this with lamb if you don't eat beef.
1 big yellow onion
2 whole cloves of garlic
3 petal of bay leaves
Veggie Base:
4 big carrots
1 can of button mushrooms - sliced thinly
200g frozen peas
4 big tomatoes - sliced
Half a small can of tomato paste or puree
Seasoning:
1 teaspoon of salt
1/4 teaspoon of pepper
1 teaspoon of of mixed spice (basil and oregon)
2 teaspoon of dark soy sauce
Steps:
Stir fry onion and garlic with butter
Fry till beef turns colour. You may add red wine to enhance flavour.
Add 2 cups of water
Add bay leaves and simmer for 1 hour
After 1 hour, add carrots + tomatoes and simmer for another 30 mins.
During the 20 min mark after you have added carrots and tomatoes, add mushrooms, green peas, tomato paste and seasoning.
Towards the end of the 30 mins, add in cornstarch solution to make it creamy.
1kg of potatoes, skinned and cut into big chunks. cook in water with salt and simmer for 20 nins. Poke to test softness. Strain water then add butten (2 big teaspoon) plus 1/4 cup of evaporated milk and mash
Final Steps:
Spread meatsauce onto carousel.
Spread potatoes on top of meatsauce.
Sprinkle 75g of cheddar cheese or mozzarella cheese.
Bake for 3 - 5 mins on 200 degrees if you are using turbo broiler or 10 mins in traditional oven on 180 degrees (use upper grill)
Voila! Ready to serve. Serves 4
